The ramen-slurping masses haven’t yet discovered Ryus, a new noodle house just a few doors down from the crowded Kinton on Baldwin.
Unlike the pork bowls at other ramen spots, Ryus’ signature is beef: rosy slices of sous vide AAA loin and al dente noodles in a pork-chicken-vegetable stock (the truffle oil for dipping is a strange touch). The spicy, scarlet miso tanmen ramen is hot enough to clear your sinuses, and the pleasantly chewy noodles work well with the soft, chili-detonated mapo tofu. All bowls come with free ginger, chili, roasted garlic or shallot sauces for extra flavour.
