Some people need to plunge into an ice bath to feel alive. Others get the same jolt by drinking a glug of garlicky brine. For the latter group, there’s Picklefest, which returns to Henderson Brewing Co. this Saturday and Sunday for its third annual pickle-palooza. This year’s lineup promises more pickles in more unexpected places than you’d think possible—some ingenious, some quirky, all beautifully briny.

Here, nine must-try items at this year’s fermentation-fuelled frenzy.

This fried-dough creation from Dipped Donuts cleverly folds punchy pickled mango into a classic cake batter. Fresh from its boiling-hot bath, it gets rolled in sugar, dusted with fiery Tajín and finished with a drizzle of mango-pickle purée. Forget boring TimBiebs—this pickle fritter is the doughnut hole that needs to stay.

Mamajoun will be slinging thin-crust pizza covered with a five-cheese blend and crowned with familiar rounds—but these aren’t pepperoni slices; they’re pickle coins.

Burgers and pickles have always been a winning combination, but We Burger’s smash hit (pun intended) is next level. A juicy, crispy-edged beef patty is tucked into a pillowy toasted brioche bun and topped with zesty garlic-parsley mayo, havarti, caramelized onions, lettuce and tomato. What qualifies it for Picklefest is that it’s sliced in half, set in a tray of bubbling cheddar-and-wine fondue, then crowned with crispy bacon and pickles (plus a spear on the side for dunking).

Dipped in batter, coated with chopped potato and fried to a heavenly crisp, these whole pickles from Barque thought they were baptized in brine—until they were dunked in hot oil for a far more glorious bath.

Skipping the carbs and cutting straight to the chase, these guilt-free sandwiches from Jimmy John’s swap out the bun for a hollowed-out pickle stuffed with juicy turkey breast and creamy provolone.

From the kimchi kings at Sodam comes the lotus flower onion, a riff on the blooming onion that unfurls dramatically on the plate. The twist is that it skips the breading altogether and goes straight into the pickle brine.

For anyone who can’t be bothered to tuck pickles into their sandwiches (or deal with them sliding out), salvation has arrived in the form of these biscuits from the Strong Food Company. Loaded with Maple Dale vintage cheddar and studded with crunchy cubes of Alchemy’s punchy pickles, they’re a shortcut to sandwich glory.

Folks who think the pinched potato pockets are overplayed, meet Rodyna’s. They’re brimming with shredded hickory-smoked pork butt, tangy sour polski ogórkis and a punchy dill pickle barbecue sauce.

And to wash it all down, a can of pickle-flavoured pop from Solly’s Craft Soda, made by the people at Henderson Brewing Co. The mouth-puckering pickle-and-lime sip is both non-alcoholic and prebiotic.
