TIP BYOB (972 Queen St. W., 416-858-2932) carries Bittermens’ excellent orange cream citrate. It’s $23 a bottle, but you only need a few drops per drink, so it’ll last until the apocalypse.

JOE GOMES PARK HYATT ROOF LOUNGE After more than 50 years at the Park Hyatt’s Roof Lounge, Joe Gomes has made every manner of old-school drink. All that experience can earn a man the benefit of the doubt—customers often request that Gomes dream up something just for them. If the sipper tends toward classics, Gomes is partial to this blood orange manhattan. He’ll twist an orange peel with gusto and spin it around the rim with a flourish. Gomes knows the best bartenders put on a bit of a show.
