
Tucked inside another restaurant at the base of Church Street is Pasta Privato, the city’s new pasta speakeasy, which opens on March 27. In this 30-seat dining room, chef Michael Angeloni (Amano Trattoria, Notte Ristorante) will serve eight carb-heavy courses inspired by his culinary journey.

“At its heart, Pasta Privato is deeply personal,” Angeloni said in a recent press release. “It’s modern Italian seen through my own lens—marrying traditional roots with the local diversity of Toronto’s culinary scene. We’ve stripped away the stuffiness of traditional fine dining to focus on what matters: the integrity of the ingredients and a genuine connection to the craft.”
While the name suggests a noodle-heavy menu, Angeloni has expanded his offerings to avoid being pigeonholed. Last May, he ran a seven-course all-pasta menu at Amano, each dish made using Canadian ingredients (it was a real post-tariff-announcement elbows-up moment). And while there’s nothing wrong with pasta, pasta and more pasta, Angeloni wanted to bring a bit more variety to Privato.

The inaugural menu, titled “Un Omaggio” (Italian for “a homage”), honours Angeloni’s mentors and the defining moments of his career. It also includes a beef heart dish that Angeloni is particularly proud of. “The Beef Heart and Beets dish draws inspiration from traditional Peruvian street food, a concept I was first introduced to while working at the Black Hoof under a fellow sous-chef from Peru,” he says. “I’ve reimagined it in my own style by incorporating Calabrian chilies and rosemary, and by layering thin slices of heart onto rosemary skewers rather than using the traditional chunks. It’s a dish that brings back fond memories of one of my favourite kitchens and reflects my passion for utilizing the often-forgotten parts of the animal.”
We all need more protein in our diets, right? To that end, along with that beef heart, Un Omaggio will also feature Mediterranean swordfish, more beef (shank, tongue, cheek), rabbit and Ibérico pork. Starring noodles will include tajarin (a Piedmontese egg pasta), agnolotti, lorighittas (beautiful braided hoops) and tagliatelle.
