There’s a dearth of decent coffee in the heart of the Financial District, which is too bad, really, since the people who slave work around there could probably use it more than most. They’ve got Dineen at Yonge and Temperance, Rooster on King East and Sam James in the PATH, but otherwise it’s pretty much a Starbucks dominion, give or take a few token Timmy Hos. Lately, though anyone who works in or around the RBC building at Simcoe and Welllington has another option: The Ritz-Carlton recently converted its nighttime sushi bar into a daytime coffeehouse, complete with breakfast pastries, yoghurt parfaits and, excitingly, espresso beverages from Pilot Coffee Roasters. Pilot, you may recall, is the name of the roasting company behind Te Aro on Queen East, Crafted on Ossington and a massive new roastery and tasting bar at Greenwood and Gerrard. It also supplies beans to about three quarters of the indie coffeehouses in town—and, as of this month, at least one extremely fancy corporate hotel.
