Gourmet Gringos, the Latin American food truck that first hit Toronto’s streets last fall, is following the lead of Fidel Gastro’s and opening a brick-and-mortar restaurant at 1384 Bathurst St., just south of  St. Clair. After realizing they needed a full-size prep kitchen to accommodate their growing truck and catering business, co-owners Krystian Catala and Terry Nicolaou decided to add a storefront and restaurant as well. The non-mobile Gourmet Gringos will feature the truck’s full menu of tacos, arepas and empanadas, and will also have a salad bar (Catala likens it to an “upscale Chipotle”.) The restaurant is scheduled to open in May, hopefully in time for Cinco de Mayo. Until then, you can find their food truck at various events around the city. [h/t BlogTO]
