
Craig Pike, owner of iconic cookie company Craig’s Cookies, is no stranger to sweet shenanigans. At last year’s CNE, he had the audacity to tuck a chicken nugget inside a freshly baked chocolate chip cookie. Then, instead of dunking it in the usual glass of milk, he swapped in a ramekin of barbecue sauce. And somehow, it worked.
Now, Pike is at it again with his new limited-time lineup of whoopie pie–like stuffed cookie sandwiches, available until March 17.
“We’re having fun building from scratch and letting our creativity run, dreaming up new doughs, new flavours and new stories,” says Pike.
The new desserts include the Chocovanilla, a slab of silky vanilla frosting pressed between two chewy chocolate cookies, and the PB&J, a nostalgic sandwich of strawberry jam between two peanut butter cookies.
But the showstopper is the Everything Bagel cookie: two rich vanilla rounds sprinkled with savoury everything-bagel spice, stuck together with a schmear of cream cheese icing. Sweet, salty, crunchy and creamy all at once, it’s bakery meets bagel shop in every delicious (and slightly unhinged) bite.

“I’m obsessed with breakfast—I always have been,” says Pike. “And there’s something iconic about an everything bagel. It’s savoury, nostalgic and comforting. One morning, our team was thinking up new flavours, and someone mentioned everything bagel seasoning. We thought, Why not cookie-ify it? So we gave it the Craig’s Cookies hug and turned it into a sammie. All three new recipes are comforting in their own way, which felt like the perfect way to introduce our cookie sammie line. Breakfast can be dessert—and we’re just getting started.”
No word yet if there will be a poached egg collaboration for the next roster of cuckoo cookies—but, if anyone could make that work, it’s Toronto’s cookie king.
