Opening soon at the Shangri-La: Bosk (no relation to the four Momofuku joints next door)
It’s no secret that David Chang’s Momofuku is opening up adjacent to the Shangri-La Hotel, and that Toronto diners are kind of excited about it. But it turns out there’s a restaurant set to open inside the hotel-condo complex itself at the end of the month, and that restaurant is called Bosk. The chef, Jean Paul Lourdes, may not be as well known as Chang, but judging from a profile by Amy Rosen in the National Post, he seems like a pretty interesting character. Not wanting to distract from the food, Lourdes refused to be photographed for the piece—except for a mysterious snapshot of him outfitted in a Red Sox hat hovering over a dish (a refreshing move when so many chefs prefer to mug for the TV camera). Lourdes soon might not have a choice in the matter, however: with a master’s degree in biochemistry from the University of Tokyo, a rule that his kitchen staff must operate in pretty much dead silence (“If you need to say more than two words, you write it down on piece of paper and hand it to me”) and a dish he calls Savage Beauty (it draws inspiration from the late Alexander McQueen), this fella might not be able to keep out of the spotlight much longer. Very arrogant…..Communicate on a piece of paper?
I can’t wait to try his food! Arrogant? Doesnt that come with the territory? Refreshing to have a chef who doesn’t want to be photographed…there are a lot of ‘celebrity chefs’ ready to have their photos taken and more interested about becoming famous than creating amazing dishes. I’d say this guy is one to watch!
Went there after TIFF. The food was nothing short of amazing, I will definately be back!
I dined there a couple of weeks ago with my wife, our waiter Jan-Michael was very pleasant and Knowledgeable about the menu, we were amazed by the presentation of the food, nothing like what we are use to in Toronto, cant wait to save up and go back
Went for high tea in the lobby during TIFF, was impressed by the selection of teas, the staff are friendly and gracious, we ordered a few items off there a la carte food menu and were very impressed by the flavor and presentation, its nice to see a lobby that you can actually dine in, cant wait to try Bosk, reviews on the chef sound very promising
This restaurant is so more humble than Momofuku, there food is so much more creative and they deliver it without the arrogance, yes the chef is not as well known as Chang, but does he need to be to cook better food, the Asian food in the lobby is alot better than Momofuku and the service is genuine, I hope this chef stays around awhile longer
