Yours Truly chef Lachlan Culjak shows viewers how he prepares a single serving of bone-marrow mousse, a stand-out “snack” on the restaurant’s tasting menu. Each component is treated with the finicky care generally reserved for brain surgery and bomb disposal: over 24 hours, things are brined, pressure-cooked, dehydrated, flash-frozen, deep-fried and pressurized in a carbon-dioxide canister—all to bring diners a few fleeting moments of unadulterated bliss.
