Must-Try: the perfectly balanced (and totally on-trend) cauliflower salad at Yours Truly

According to food prognosticators, lowly cauliflower is going to be the hot vegetable of 2014. At Yours Truly, head chef Lachlan Culjak turns the cruciferous veg into culinary art by transforming it into three totally different forms: a wobbly brick of mousse seasoned with earthy kombu dashi; sweet caramelized florets; and crispy chips that peek like bare trees out of an edible landscape of briny black-olive “soil,” tangy pickled pearl onion petals and sprigs of lemony baby purslane. It’s a delicate explosion of contrasting textures, temperatures and flavours that perfectly showcases the versatility—and deliciousness—of the unassuming winter staple. Available on both of the restaurant’s 5-course ($55) and 20-course ($95) tasting menus.
