Charlotte Langley, the new chef at Catch, is a talent on the rise. The P.E.I. expat took over the kitchen in May, infusing the menu with the kind of decadent imagination that makes a culinary destination. Her s’mores are an exercise in sensory overload: creamy bricks of boozy chocolate mousse topped with a graham cracker crumble and served with local, seasonal fruits roasted till gooey and caramelized. Then there’s the centre­piece: house-made marshmallow spun out into ethereal fluffs and torched tableside until it smokes, crackles and melts all over the place.
