Toronto has a whole week devoted to not eating gluten
For one fleeting week, gluten-avoidant diners will have the opportunity to order off regular menus without mildly exasperating everyone around them. From May 25 to 31, over 20 Toronto restaurants are offering three-course prix-fixe menus designed especially for those who have shunned gluten, for one reason or another. The list of participants includes trendy spots like Playa Hacienda, Täbulè and Yours Truly, which is great news for people who sometimes feel gross after eating lots of bread, or who heard somewhere that consuming gluten isn’t good for you. Unfortunately for the truly allergic, the restaurants can’t guarantee 100-per-cent gluten freedom—as made clear by the prominent disclaimer on the event’s website. Sorry again, celiac sufferers. Your day has yet to come.

I have gluten intolerance so this is fantastic!
One of the things I hate about being gluten intolerant is that people assume that is just my choice to be picky, and as you say “become mildly exasperated”. After years of horrible allergy reactions that were of maximum exasperation (mostly to my face and stomach) I was inevitably forced (after many doctor consultations/allergy/blood tests) to assume a new diet that is both dairy and gluten free. I am an elite athlete, and come from a family of chefs, so saying that I love to consume food is an understatement. This has been a very challenging lifestyle change for me, but the understanding and help from great restaurants like this is making the transition more manageable. Realizing that there are plenty of folks out there who are adopt this diet who aren’t necessarily medically affected by gluten – my advice – talk to your doctor about any diet.

Madness, and ignorance… hmm.. not sure if you are trying to come off as harsh as you sound, but when you are faced with the challenge, believe me you do all the research and ask all the questions you can as you go through the process.
Bottom line, people shouldn’t be making dietary changes via trend watching, but with medical guidance, and I am sure by your tone that we can both agree on that… :)

This is perfect timing given that the original researchers who developed the concept of non-Celiac gluten sensitivity have now repudiated their original findings, meaning if you’re not Celiac, you’re not gluten-sensitive. Enjoy the week, though!
