Hamilton’s Dear Grain made its big move to Toronto with the opening of a splashy “sourdough studio” on Ossington. The name is apt: this is much more a showroom for high-end carbs than a traditional bakery. Adri Greenspan’s loaves are the main attraction: he’s a true sourdough savant, able to coax exceptional flavours and textures from humble ingredients.
