All Mixed Up: Oliver Stern of the Toronto Temperance Society mixes a frothy Bitter Angel

Oliver Stern is the bar manager of the Toronto Temperance Society, which we last visited in April. Here, he shows us his “Bitter Angel,” a cocktail inspired by one customer’s favourite drink.

Ingredients:

1.5 oz. Amaro Nonino 0.5 oz. Campari 0.75 oz. fresh-squeezed lemon juice 0.25 oz. 1:1 simple syrup 1 small egg white 4 dashes Angostura bitters

Recipe:

1. Separate the white from a small egg and place in a Boston shaker 2. Add Amaro Nonino and Campari 3. Top up with fresh lemon juice and simple syrup and shake, without ice, for 15 to 20 seconds 4. Add ice and shake for another 15 to 20 seconds 5. Double strain into a coupe glass and garnish with Angostura bitters
