For ethically tortured piscivores, trawling the fish counter can be like walking a minefield. Here, three sustainably caught fish to bait your hook

What: Whitefish Why: Netted in the waters of Lake Erie, this delicate, flaky fish is terrific when baked under a crust of garlicky breadcrumbs. It’s also a top choice for Jewish gefilte. Where: Pisces Gourmet, 1097 Yonge St., 416-921-8888.

What: Albacore tuna Why: This small tuna, caught off the coast of British Columbia, has lean, pink flesh that can be cut into thick steaks, rubbed with crushed fennel seed and briefly seared in a hot skillet. Where: Hooked Inc., 888 Queen St. E., 416-828-1861.

What: Wild sockeye salmon Why: Available fresh in summer (and frozen year-round), sockeye has a rich flavour that makes it a natural for a maple glaze and cedar smoking. Where: Seafront Fish Market, St. Lawrence Market, 93 Front St. E., 416-365-0086.
