For ethically tortured piscivores, trawling the fish counter can be like walking a minefield. Here, three sustainably caught fish to bait your hook

What: Whitefish Why: Netted in the waters of Lake Erie, this delicate, flaky fish is terrific when baked under a crust of garlicky breadcrumbs. It’s also a top choice for Jewish gefilte. Where: Pisces Gourmet, 1097 Yonge St., 416-921-8888.
