What: Whitefish
Why: Netted in the waters of Lake Erie, this delicate, flaky fish is terrific when baked under a crust of garlicky breadcrumbs. It’s also a top choice for Jewish gefilte.

What: Albacore tuna
Why: This small tuna, caught off the coast
of British Columbia, has lean, pink flesh that can be cut into thick steaks, rubbed with crushed fennel seed and briefly seared in a hot skillet.

What: Wild sockeye salmon
Why: Available fresh in summer (and frozen year-round), sockeye has a rich flavour that makes it a natural for a maple glaze and cedar smoking.
