All Mixed Up: Watch Acadia’s Benjamin Deacon prepare a Kraken-fashion

Acadia serves a mix of classic and contemporary cocktails to complement its menu of artfully presented Acadian and Lowcountry cuisine. Here, bartender Benjamin Deacon shares his current favourite, the “Kraken-fashion” ($12), a spin on a rum old-fashioned.
INGREDIENTS
2 oz. Kraken rum
1/2 oz. demerara simple syrup
2 or 3 dashes of Xocolatl Mole Bitters from The Bitter Truth
1 orange slice
1 orange zest for garnish
DIRECTIONS
1. Combine rum, demerara syrup, bitters and orange slice in a separate mixing container (Deacon uses the Yarai mixing glass).
2. Muddle the orange slice by pressing down and twisting.
3. Add ice and stir until the desired dilution is reached.
4. Pour contents through sieve into tumbler with a large ice cube and serve.

Benjamin is my absolute favourite bartender in the City at the moment. Just try to order a “traditional” rye and ginger or rum and coke from him. I dare you….
Do you enjoy “Kracken” rum? I highly recommend reading the book, upon which the bottle label creature is based … “The Kraken Wakes” by John Wyndham. Very intriguing, with just enough ring of truth to believe it could very well happen!
