Acadia serves a mix of classic and contemporary cocktails to complement its menu of artfully presented Acadian and Lowcountry cuisine. Here, bartender Benjamin Deacon shares his current favourite, the “Kraken-fashion” ($12), a spin on a rum old-fashioned.
2 oz. Kraken rum 1/2 oz. demerara simple syrup 2 or 3 dashes of Xocolatl Mole Bitters from The Bitter Truth 1 orange slice 1 orange zest for garnish
1. Combine rum, demerara syrup, bitters and orange slice in a separate mixing container (Deacon uses the Yarai mixing glass). 2. Muddle the orange slice by pressing down and twisting. 3. Add ice and stir until the desired dilution is reached. 4. Pour contents through sieve into tumbler with a large ice cube and serve.
