Food Network star Anthony Sedlak consulting on new hotel restaurant in Toronto

Hidden away on Wynford Drive, at Eglinton and the DVP, the Toronto Don Valley Hotel and Suites is undergoing a $4-million transformation, which includes a food service overhaul courtesy of Food Network Canada star Anthony Sedlak, of The Main. Allied Hotel Properties, which bought the property in 1998, has joined forces with Atira Hotels of Chicago to re-brand the 353-room hotel as “the city’s first urban resort.”

In operation since 1968, the place has been a Holiday Inn, Radisson and Crowne Plaza. Renovations are well underway and should be completed by mid-summer 2012, with a grand opening sometime in September (organizers are already sending out invites to sports celebs, Mayor Ford and “other influential figures”). Vancouver designers Lynne Darby and Chris Doray, as well as Toronto’s Harry Christakis, have been charged with the task of integrating the building with its verdant ravine landscape, while Sedlak updates the hotel’s food and beverage program. A close personal friend of the owners, Sedlak will be working with the hotel’s existing culinary team to create new menus, a new vibe and new directions for both on-site restaurants, as-yet unnamed, and room service. The big question at this point: will Sedlak take this opportunity to bring an outpost of his American Cheesesteak Co. to Toronto?
