This flavourful menu item is served exclusively to travellers visiting the Air Canada Signature Suite at Toronto’s Pearson Airport, a destination in itself. The luxurious lounge offers eligible Air Canada Signature Service customers an elevated sit-down dining experience that feels worlds away from the busy crowds.

Amid sleek surroundings, travellers can enjoy world-class hospitality, premium bar selections and à-la-carte offerings that put the spotlight on premium Canadian cuisine. Travellers from across the globe can savour the fresh, flavourful taste of this wild Atlantic fish, sourced directly from Fogo Island—a historic fishing community nestled off the northeast coast that has been part of Newfoundland and Labrador for over 400 years.

As an eighth-generation Fogo Islander, founder of Shorefast and innkeeper at the prestigious Fogo Island Inn, Zita Cobb has a longstanding connection to the island’s fishing community and is a key partner in Air Canada’s latest culinary venture. “Cod is at the heart of who we are as a people—it’s been central to our lives for generations,” she explains. “For Fogo Islanders, this fish has been more than sustenance; it’s been our connection to the community and the incredible resources this country has to offer.”

Fishing is a centuries-old way of life for the people of Fogo Island, and a recent return to traditional small-boat fishing practices is helping ensure the remote island community remains economically viable and vibrant. The small-scale fishing operation employs traditional hand-line methods that have been passed down through families for generations.
