The pirate’s grog is making a comeback. Here, County General bartender Jeff Carroll concocts his favourite rum cocktails, with fun new twists

Six ways with rum

1 | Dr. Painkiller (pictured) Shake 2 oz El Dorado Deluxe Silver rum, 1 oz fresh lime juice, ¾ oz grenadine, 3 drops Fee Brothers cranberry bitters, 2 slices muddled cucumber and a handful of cranberries with ice. Pour into a 16-oz Mason jar. Top with ginger beer and garnish with shaved ginger.

2 | Wake-Up Call Shake 1 ¼ oz El Dorado Deluxe Silver rum, 1 oz chilled espresso and 1 oz Kahlua with ice. Double-strain into a coupe. Garnish with three espresso beans.

3 | Kraken Nog Shake 1 beaten egg, 1 oz Kraken rum, ¼ oz Rémy Martin cognac, ¾ oz simple syrup, 2 dashes cinnamon and 1 oz cream. Double-strain into a stemless wine glass. Garnish with a cinnamon stick.

4 | The Eye of the Storm Shake 2 oz Gosling’s rum, ¾ oz lime juice, ½ oz simple syrup and 3 or 4 blackberries with ice. Pour into a Collins glass. Top with ginger beer and garnish with candied ginger.

5 | Zombie Apocalypse Shake 1 oz El Dorado Amber rum, 1 oz El Dorado Deluxe Silver rum, ¼ oz Grand Marnier, ¾ oz fresh lime juice, ½ oz grenadine and 1 oz pineapple juice with ice. Pour into a wine glass. Garnish with a pineapple slice.

6 | Lingua Franca Stir 1¼ oz El Dorado Superior White rum, ¾ oz Campari, ¾ oz Lillet Blanc and 2 drops Fee Brothers grapefruit bitters with ice. Pour into coupe. Garnish with grapefruit zest.
