Must-Try: a syrupy treat made from Quebec goat milk

Goat milk jam sounds funky, but this sweet, faintly licoricey spread is a luscious indulgence. The Petit family—who own one of the country’s last independent dairy operations in Sainte-Angèle-de-Monnoir, 50 kilometres east of Montreal—raise their goats on grass, fresh brewers’ grains and leftover bread from nearby restaurants. They add natural cane sugar to the herd’s tangy milk, then simmer it until it thickens and caramelizes into dulce de leche–like deliciousness. The jam is fabulous smeared on a scone with a wedge of sharp cheddar, or spooned over apple crostata with vanilla ice cream. $19.95 for 180 mL. Stasis Preserves, 476 Roncesvalles Ave., 647-766-5267.
