Must-try: Origin Liberty’s tropical pancakes remind us why we queue for brunch

In Thailand, locals refer to the well-worn backpacker circuit as the Banana Pancake Trail—a nod to the brunch served at hostels along the way. Origin Liberty’s Bangcakes (a portmanteau of Bangkok and pancakes) are an absurdly indulgent take on the tradition. Moist, spongy sourdough flapjacks are loaded with cubes of fresh pineapple and crisp, caramelized banana slices. On top, there’s a sprinkle of salty crushed peanut brittle and a dollop of whipped coconut cream.
