David Lawrason’s Weekly Wine Pick: a cava that’s perfect for this early-onset summer

Adar de Elviwines Brut

$15.95 | Spain | 89 Points This newly arrived Spanish bubbly is ideal for toasting to our sudden onset of summer. And if the weather tanks from here, you can still pull it out again in June should it be called for.

The taste: Expect more fruit exuberance than in other Spanish sparklers at this price. It has yellow pear and lemon aromas with nuances of clover honey, green olive and some bready complexity. It’s light on its feet, with fine effervescence and acidity and chalky minerality typical of cavas from the hills southeast of Barcelona. Very good flavour length, especially for the money.

How to drink it: Chill well but don’t serve stone cold or the fruit charm will be lost. The wine itself has enough vibrancy to refresh when warmed a little. Match with seafood or hors d’oeuvres, olives and milder cheeses.
