Chefs are letting their imaginations run wild with these creative cheesecakes

We’ve all made resolutions, but sometimes keeping healthy means indulging a little. At restaurants across the city, chefs are re-imagining the humble cheesecake. They’re subbing plain cream cheese for tangy goat or manchego, and adding unusual components like beets, preserved pears and pop rocks. Here, seven unconventional takes on the classic dessert.
