Owner/Chef: Ryuichiro “Roy” Takahashi, a Japanese expat who worked as a ramen chef in Vancouver before moving to Toronto

The Food: Classic shio (salt), shoyu (soy) and miso ramen, plus less conventional bowls like roast beef–arugula ramen with truffle oil and a vegetarian potage with shiitakes and cauliflower purée.

The Place: A small, streamlined space with sliding wooden doors and framed Japanese prints. The patio out front seats 12.

The Numbers:
• 5,000 pairs of wooden chopsticks shipped in from a supplier every three and a half weeks
• 72 hours to cook chef Takahashi’s signature sauce (a combo of pork, chicken and Japanese veggies)
• $50 for the bottle of Denki Bran, an uncommon Japanese brandy, displayed in the front entranceway
