After a decade at the helm of the highly acclaimed, 25-year-old Harbord Street restaurant, chef and owner Victor Barry will serve his last tasting menu on December 31. When we last spoke with Barry, he was in pursuit of fine-dining perfection—even if that meant being up against the city’s unstoppable taco and burger trends. In an interview with the Globe & Mail, Barry shared his reasons behind the decision to close the restaurant, admitting that he’s done everything he’d set out to accomplish and it’s time to focus on his family. From now until it closes, Splendido will feature a menu of Barry’s classics including his egg yolk ravioli and grilled rib steak, as well as new favourites like the five hour–roasted carrot. “It’s all the little delicious things we’ve worked towards—the last 18-and-a-half years of my life—the pinnacle of what I’ve learned how to do,” says Barry, “and there are two more months to share it.”
