The Food: Just Sushi aims to serve traditional Japanese fare, only with a conscience. This means the raw fish—from toro to wild sockeye salmon to albacore tuna—is all approved by Ocean Wise’s sustainability program. The organic ginger and wasabi are preservative-free, while the miso soup is made with organic genmai miso and house dashi. For the fish-shy, there are roasted nigiri-shimenji mushrooms and house-made tamago—Just Sushi’s take on the traditional Japanese omelette.

The Drinks: The restaurant is unlicenced, but serves specialty Asian drinks like oolong and sencha green tea shots, organic ginger ale and local organic Ontario juices by Treehugger.

The Place: The 620-square-foot nook presents a minimalist Zen design set off by a living wall of 25 living plant varieties. A plasma TV and two tablets introduce customers to the history and environmental status of each fish on the menu. Other sustainable elements include Bullfrog Power, e-bikes for deliveries and compostable take-out containers.
